Pumpkin Spice Cookies




If you know me then you'll know that I love love LOVE Autumn! I am obsessed with absolutely everything about this time of year, especially the food. Oh my goodness, the food! Cinnamon and pumpkin spice on EVERYTHING please!

I thought that I would share this love of pumpkin spice and all things nice by whipping up some cutie lil pumpkin cookies for you to try if you are a fellow Autumn lover like myself. They're honestly so quick to make, super fun to decorate, and delicious to eat of course.

Ingredients
2 eggs
1 cup butter
2 1/2 cups flour
1 tsp salt
2/3 cups sugar
1 1/2 tsp cinnamon
1/2 tsp ginger
1 1/2 pumpkin spice

For the royal icing
2 egg whites
500G icing sugar
1 tbsp lemon juice
Food colouring

Method
1. Beat the sugar and butter together until smooth and creamy.
2. Add the egg and mix well.
3. Fold in the flour, salt, cinnamon, ginger and pumpkin spice until a dough starts to form.
4. Use your hands to finish forming the dough then wrap in cling film and refrigerate for approx. 1 hour.
5. Heat your oven to 180 degrees C.
6. Roll out the dough onto a floured surface to approx. 1/4inch thick.
7. Use your cookie cutter to cut out your shapes and place them onto a baking tray with greaseproof paper.
8. Bake for 8-10 mins and slightly firm to the touch. Leave to cool before icing.
9. To make the royal icing, beat the egg whites until frothy then gradually add in the icing sugar.
10. Add the lemon juice. If the mixture is still quite thick, more lemon juice can be added to thin it out.
11. Separate the icing into separate bowls so that you can add different colours if you wish.
12. After mixing in the food colouring, spoon the icing into piping bags, snip the ends ever so slightly and pipe your designs onto the cookies.
13. Allow the icing to set and then enjoy!
